TIME: 15-20 minutes
8 cups water
1 small bok choy, cut into small pieces
3-4 fresh shitake mushrooms, sliced very thin
1/2 package of tofu, cubed
2 tbs dried wakame seaweed
8 tbs miso paste (more or less to taste) -- check ingredients are vegan and do not contain "bonito"
3-4 scallions, cut into small rounds
While the water is coming to a boil, prep the ingredients. When the water boils, take it off the heat and add bok choy, shitake, tofu, wakame. Let stand for 5 minutes while the veggies cook and the seaweed soaks. During that time, in a seperate cup or bowl whisk the miso with a small amount of water until the miso is smooth and not chunky. Add the miso into the large pot. Finally, add the scallions just before serving.
