Fancy Mung Bean Kitchri
Ingredients
1/2 cup dry whole green mung dal
1/2 cup brown basmati rice / I like a multi-grain rice for added fanciness!
oil for cooking
1 tsp whole cumin seeds
1/2 cup chopped red onion
2 medium tomatoes (or 1/3 cup pain canned tomato sauce)
3 cloves of garlic
1 tsp chopped green chili (optional)
1 inch ginger, finely diced
1/2 tsp turmeric
1 tsp ground coriander
1/2 tsp garahm masala
1/4 cayenne
4 cups water
1 cup coarsely chopped cauliflower
1/2 cup frozen green peas
lemon juice and cilantro to finish
Instructions
Rinse and soak the dal and rice while preparing the rest of the ingredients
Blend the tomatoes if using fresh
Heat some oil in the pressure cooker and roast the cumin seeds in the oil for about a minute
Add the onions, garlic, chili (if using) and a pinch of salt and sautee for a couple of minutes
Add the tomato, ginger and spices
Drain the dal and rice, and add to pot, add cauliflower and water
Close the lid, once pressure is reached cook for 15-20 minutes (less if using brown rice, more if using mixed rice) - quick release using cool water
Add frozen peas and stir to thaw them in the mixture. Serve with cilantro and a squeeze of lemon
